I'm back!! Gymnastics and football have taken over my life, so life has been a little hectic over here. This week I am embracing fall, football and all things social! I absolutely LOVE this time of year and entertaining is what we best do in our home. A friend of mine actually turned me on to this recipe and I could eat it with a spoon! So, when planning your next party either invite me over (and I will bring it), or put this on your "what to serve" list. It is super delicious and is bound to be a hit with your family and your guests!!
Black Bean and Avocado Corn Salsa
1 large can petite cut diced tomatoes (at least
1 can black beans (15 oz.)
1 small can white shoepeg corn or thawed frozen
1 C Zesty Italian salad dressing
1/2 onion chopped
1/2 green pepper chopped
2 green onions chopped
1-2 jalapeños chopped (seeds removed)
1/4 bunch of fresh cilantro chopped
1/2 tsp garlic powder
salt and pepper to taste
Drain tomatoes a little, retaining most of the juice. Drain and rinse black beans. Add both to large bowl.
Chop all veggies, add to bowl and mix well. Add garlic powder, salt and pepper to taste. Add salad dressing slowly. You don't want it to be too runny.
Refrigerate for at least 2 hours before serving.
Serve with Tostitos Scoops (to get all the yummy goodness)
